Easy Microwave Caramels
1 cup sweet butter 1/8 tsp. salt
2 1/3 cup brown sugar (firmly packed)
1 tsp. vanilla
1 cup light corn syrup
14 oz. can sweetened condensed milk
In a 2-quart microwave safe bowl, combine butter, sugar, syrup, milk and
salt. Microwave on high for 4 minutes, stirring after 2 minutes. When
butter is melted, stir well. Attach a microwave thermometer. Microwave
on high about 15 minutes until it reaches 245 degrees F (firm ball stage).
No stirring is needed. Remove from microwave, add vanilla. Allow to
stand for 10 minutes stirring several times. Pour into a buttered 9x13
pan. Refrigerate until cool. Invert pan and cut into squares and store
in the refrigerator. Can also freeze.
