About 10 mins prep time and 1hour 15 cook time.
Serves 3 to 4 (although the two of us can eat it with ease - especially topped with a good steak or duck breasts with either Pototo Rosti or just good old crusty bread)
Ingredients4 Tomatoes
2 Aubergines (AKA Egg Plants I think)
1 Green Pepper (AKA Capsicum)
2 Medium Onions
3 or 4 Courgettes
Half a Cucumber
2 Tablespoons Oil (pref Olive Oil)
25g Butter
1 clove Garlic (crushed)
Salt & Black Pepper
Chopped parsley
Turn on the oven Gas Mark 4 / Electric 180C / 350F
Place an oven proof (pref metal) casserole type dish on the hob and heat the oil & butter
Rough chop the onions and allow to sweat for about 2 mins, stir gently
Rough chop all the other ingredients and add to the dish - stir and season to taste.
Place a tight lid on top and transfer to the oven - cook for about 1 hour 15 mins.
Thats it................. Enjoy
