So simple to cook - yet so many folks are scared to venture into cooking this wonderful food.
Preheat the oven to Gas Mark 6 ( about 220C)
Using a sharp knife score the fat side of the breasts about every half inch.
On the hob, heat a heavy pan till very hot.
Place the breasts fat side down onto the pan, cook for 2 mins.
Turn the breasts over and place a single knob of butter in the pan, cook for one minute.
Remove the breasts from the pan and place in an oven proof dish, put in the oven for 10 minutes.
Remove from oven and leave to rest for 10 minutes.
Slice and serve...........
These Duck Breasts will be pink on the inside. Served with Orange slices, warm honey and fresh redcurrents they are YUMMY!!
Try with Ratatoullie, Linguini, Potato Rosti or just plain salad.
A perfect alternative to steak.................
