3 cups frozen fruit blend thawed and drained
2Tbsp butter
1/3 cup brown sugar
3 cups buttermilk pancake batter
Heat oven to 350
Drain fruit blend on paper towel to remove excess liquid
Spray jumbo sized muffin pan with nonstick spray
Spoon even amount of butter & brown sugar into bottom of each muffin pan..Bake for 5 mins to melt butter and sugar
Top with fruit blend and pancake batter
Bake for 12-15 minutes or until golden brown
