Serves about 4 - (although it's easy to eat the lot by yourself!) Blueberry Fool rippled with creme fraiche Scooby-d

300g Blueberries
50g Caster Sugar
200ml pot of Creme Fraiche
142 ml pot Double Cream
1 or 2 tsp Icing Sugar (use the amount to your preferred taste)

Method

Place about 20 blueberries to one side for use as final decoration

Put the remainder of the blueberries into a pan with the caster sugar and 1 tablespoon of cold water.

Heat gently for 9 to 10 minutes, or until the blueberries are soft and the sugar has fully dissolved. Crush using a fork or back of a spoon and leave to one side allowing to cool

Whip the Creme Fraiche and Double Cream together with an electric whisk or ballon whisk for 2-3 mins until soft peaks have formed.

Fold the blueberry mixture into the cream - hopefully to give a rippled effect. (But who cares it's all the same when eaten!)

Divide into bowls and top with the remaining blueberries.

Chill in the fridge until ready to eat. (or eat immediately before anyone else sees it!)

Almond thin biscuits work well with this - we tried it today in the staff Dining Room - it was SPOT ON!

Stewart - go to your local Waitrose - push past all the stroppy customers - barge past the lazy managers - buy the stuff from the shelf - go to the checkouts via the Wines section - pick up a decent bottle of whatever you like - ask a pretty checkout girl if she will make your dessert for you - drink the wine in shock she didn't say no..........enjoy!
