Celebrate the Chinese New Year on 18.2.07 with this quick and easy supper dish.
Serves 4 / Prep time 10 mins / Cook time 15 mins.
2 tbsp Sunflower Oil
2 large egges , lightly beaten
1 onion, thin sliced
1 tbsp Chinese Five Spice Paste
150g Baby (Dwarf) Corn sliced lenthways
350g Basmati Rice , cooked, cooled and chilled (Do the day before if you wish - use Brown Basmati for a nutty flavour)
1 bunch salad / spring onions, thin sliced
25g Fresh Coriander , fine chopped
200g cooked large prawns
Soy Sauce to taste.
Heat 1 tbsp oil in large pan / wok. Add the beaten egg and cook for 2-3 mins, whisking gently to lightly scramble. Remeove from pan and set aside.
Add remaining oil and gently fry the onion over a high heat for 2-3 mins until it soft and turning golden. Reduce the heat and add the five spice paste. Cook for 1 min stirring all the time.
Add the baby corn and stir for 3 mins. Stir in the rice, most of the sald onions, most of the coriander, all the Prawns and egg. Heat through for about 2 minutes.
Serve in pre heated bowls with the remaining coriander and salad onions as garnish. Add Soy Sause to taste.
(You can add / replace the prawns with thin chicken if you wish) Prawn Crackers go well as a accompiment.
A lightly chilled Guwurztraminer White Wine is great with this type of dish.
